  • 6 to 8 potatoes
  • 8 oz. sour cream
  • 3 Tbsp. butter
  • 1 egg
  • 1 Tbsp. chopped onion
  • salt and pepper
  • 1/4 c. cornflake crumbs
  • 1/4 c. grated cheese (your choice)
  • 1/4 c. melted butter

Directions

    Cook potatoes; drain and mash.

    Add sour cream, butter and egg.

    Beat until fluffy.

    Add onion, seasoning and a little milk (if it needs thinning).

    Place in buttered casserole.

    Combine cornflakes, cheese and melted butter.

    Sprinkle over potatoes. Bake at 350° for 30 minutes or until golden brown.
