- 6 to 8 potatoes
- 8 oz. sour cream
- 3 Tbsp. butter
- 1 egg
- 1 Tbsp. chopped onion
- salt and pepper
- 1/4 c. cornflake crumbs
- 1/4 c. grated cheese (your choice)
- 1/4 c. melted butter
Directions

1Cook potatoes; drain and mash.

2Add sour cream, butter and egg.

3Beat until fluffy.

4Add onion, seasoning and a little milk (if it needs thinning).

5Place in buttered casserole.

6Combine cornflakes, cheese and melted butter.

7Sprinkle over potatoes. Bake at 350° for 30 minutes or until golden brown.
