  • 3 whole chicken breasts, skinned, boned and halved
  • 1 c. low-fat buttermilk
  • 1 Tbsp. Dijon mustard
  • 1 tsp. lemon juice
  • 1/4 tsp. pepper
  • 1 1/2 c. corn flake crumbs
  • 3/4 tsp. fine herbs

Directions

    Dip each breast half in buttermilk mixture and roll in crumbs. Place on foil-lined baking sheet.
