Curry Mayonnaise

Ingredients

  • 1 tbsp. oil
  • 1 sm. onion, finely chopped
  • 1 clove garlic, crushed
  • 1 tbsp. curry powder
  • 2 tsp. tomato paste
  • 2 slices lemon
  • Salt and fresh ground pepper
  • 2 tbsp. mango chutney
  • 2 to 3 tbsp. cream
  • 1-1/4 cup mayonnaise (homemade)

Directions

    Heat oil in a small pan, add onion and garlic and saute gently until onion is transparent.

    Add curry powder and cook, stirring for a few more minutes.

    Stir in tomato paste.

    Add lemon slices and salt and pepper and cook gently 3 minutes more.

    Cool and remove lemon slices.

    When cold, add chutney, mayonnaise and cream, mix well.

    Taste and add more seasoning if needed.

    If mayonnaise is too thick dilute with a little warm water.
