- 2 1/2 lb. pickling cucumbers, thinly sliced (8 c.)
- 1 medium onion, thinly sliced
- 1 Tbsp. salt
- 1 green pepper, cut into thin strips
- 2 c. vinegar
- 1 1/3 c. sugar
- 1 Tbsp. curry powder
- 2 tsp. pickling spice
- 1 tsp. celery seed
- 1 tsp. mustard seed
- 1/2 tsp. pepper
Directions

1In a large mixing bowl, combine cucumbers and onion.

2Sprinkle with salt.

3Cover with ice water and let stand for 3 hours.

4Drain well.

5Rinse and drain again.

6Combine all ingredients.

7Heat just to boiling.

8Fill pint jars, leaving 1/2-inch headspace. Refrigerate when cooled.
