- pastry for 9-inch pie
- 4 eggs, beaten slightly
- 2/3 c. sugar
- 1/2 tsp. salt
- 1/4 tsp. nutmeg
- 2 2/3 c. scalding hot milk
- 1 tsp. vanilla
Directions

1Make pastry for one-crust pie.

2Build up high fluted edge. Beat the remaining ingredients together.

3Pour into pastry lined pie pan.

4Bake just until a silver knife inserted into side comes out clean.

5The center may still look soft, but will set later. Too long baking makes custard watery.

6Bake at 450° for 15 minutes, then at 350° to finish.

7Bake for 25 to 30 minutes.

8Can be baked at 425° for same time.
