Danish Cucumbers

  • 4 medium cucumbers
  • 1/2 c. white vinegar
  • 1/4 c. sugar
  • 2 Tbsp. chopped fresh dill
  • 1/4 tsp. pepper

Directions

    Cut cucumbers into paper thin slices.

    In bowl, mix slices with 2 teaspoons salt.

    Let stand at room temperature for 1 hour. Drain liquid from cucumbers.

    Stir in vinegar, sugar, dill and pepper.

    Cover and refrigerate at least 3 hours before serving. Serves 8.
