- 1 tablespoon butter
- 1 tablespoon minced onion
- 1 cup mashed potatoes
- 2 cups milk
- 1 cup chicken broth
- 1/2 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- 1 dash pepper
- 1 pinch dried parsley
Directions

1Melt butter over medium-low heat in a pot large enough to hold the soup.

2Add the minced onions and saute for a 3-4 minutes until the onions are soft and translucent.

3Add the remaining ingredients and simmer for about 10 minutes stirring occasionally.

4The soup will keep for a day or two in the fridge.
