  • 5 medium size eggplants
  • 5 eggs
  • 14 oz. grating cheese
  • 16 oz. bread crumbs (or more)
  • dash of pepper
  • 1/2 tsp. salt
  • 2 tsp. parsley
  • 1/2 tsp. garlic powder
  • 6 Tbsp. tomato sauce
  • 4 peppers, sliced lengthwise

Directions

    Peel and cut eggplant. Place in boiling water and cook for 1/2
