  • 1 medium size eggplant
  • 2 Tbsp. butter or oleo
  • 1 egg
  • 1 chopped onion
  • 1/2 c. grated cheese
  • 1 c. bread crumbs or crushed saltines
  • 1 c. milk
  • salt and pepper to taste

Directions

    Peel and cut eggplant in chunks.

    Boil until tender; drain. Mash with butter.

    Add slightly beaten egg, onion, grated cheese, milk and seasoning.

    Mix well and bake 30 or 40 minutes at 350°.
