- 1 medium size eggplant
- 2 Tbsp. butter or oleo
- 1 egg
- 1 chopped onion
- 1/2 c. grated cheese
- 1 c. bread crumbs or crushed saltines
- 1 c. milk
- salt and pepper to taste
Directions

1Peel and cut eggplant in chunks.

2Boil until tender; drain. Mash with butter.

3Add slightly beaten egg, onion, grated cheese, milk and seasoning.

4Mix well and bake 30 or 40 minutes at 350°.
