- 1 medium eggplant
- 1 lb. ground beef
- 1 medium onion
- 2 Tbsp. shortening
- 1 c. milk
- 1 can mushroom soup
- 1 c. cracker crumbs
- 1 egg
Directions

1Peel and cut up eggplant in small cubes; cook in salt water until tender.

2Brown beef and onion in shortening.

3Mix with eggplant; season with salt and pepper.

4Add milk, soup, beaten egg and 1/2 cup crumbs.

5Mix thoroughly.

6Pour into greased baking dish; top with remaining crumbs.

7Bake for 1 hour at 350°.
