- 2 medium eggplants, peeled and sliced 1/4-inch lengthwise
- 1 lb. ground turkey
- 1 chopped onion
- 2 garlic toes, chopped
- 2 small cans tomato sauce
- 1/2 c. Parmesan cheese
- 1 pkg. sliced Mozzarella cheese
- 1 (4 oz.) can mushrooms or fresh
- salt and pepper to taste
Directions

1In large casserole, sprayed with Pam, layer eggplant slices and Mozzarella cheese.

2Sprinkle with Parmesan cheese.

3Make several layers of eggplant slices and cheeses.

4Saute turkey, onion, garlic, mushrooms.

5Add tomato sauce.

6Salt and pepper to taste.

7Pour turkey mixture over eggplant.

8Bake at 350° for 45 minutes.
