Eggplant Parmesan

  • 2 medium eggplants, peeled and sliced 1/4-inch lengthwise
  • 1 lb. ground turkey
  • 1 chopped onion
  • 2 garlic toes, chopped
  • 2 small cans tomato sauce
  • 1/2 c. Parmesan cheese
  • 1 pkg. sliced Mozzarella cheese
  • 1 (4 oz.) can mushrooms or fresh
  • salt and pepper to taste

    In large casserole, sprayed with Pam, layer eggplant slices and Mozzarella cheese.

    Sprinkle with Parmesan cheese.

    Make several layers of eggplant slices and cheeses.

    Saute turkey, onion, garlic, mushrooms.

    Add tomato sauce.

    Salt and pepper to taste.

    Pour turkey mixture over eggplant.

    Bake at 350° for 45 minutes.
