- 1 doz. tortillas
- 2 cans enchilada sauce
- 1 lb. ground beef (chicken or turkey)
- 1 lb. Monterey Jack cheese, grated
- 1 lb. Cheddar cheese, grated
Directions

1Brown meat until well done.

2Drain off any fat.

3Add 2 cans enchilada sauce and a little water from each can (rinse them out). Heat tortillas in microwave until soft.

4Spoon meat/sauce mixture in center of each tortilla.

5Sprinkle with both cheeses.

6Roll up and place edge side down in a 9 x 13-inch baking pan.

7The pan should hold 8 to 10 rolled enchiladas.

8Spoon remaining sauce over enchiladas and sprinkle with remaining cheeses.

9Bake at 325° until bubbly, about 30 minutes.
