Fantastic Black Bean Soup

  • 2 teaspoons vegetable oil
  • 2 teaspoons garlic, minced
  • 1 cup onion, chopped
  • 1 cup carrot, chopped
  • 1 (19 ounce) can black beans, rinsed and drained
  • 3 cups chicken stock
  • 34 teaspoon ground cumin
  • 14 cup fresh parsley, chopped

Directions

    In a large skillet, heat oil over medium-high heat.

    Add garlic, onions and carrots; cook for 4-5 minutes or until onions are softened.

    Stir in beans, chicken stock and cumin; bring to a boil.

    Reduce heat to medium-low and simmer, covered, for about 20-25 minutes or until the carrots are soft.

    In a food processor or blender (I use my hand mixer), puree soup in batches until smooth.

    Sprinkle with parsley before serving.
