Fantastic Black Bean Soup

- 2 teaspoons vegetable oil
- 2 teaspoons garlic, minced
- 1 cup onion, chopped
- 1 cup carrot, chopped
- 1 (19 ounce) can black beans, rinsed and drained
- 3 cups chicken stock
- 34 teaspoon ground cumin
- 14 cup fresh parsley, chopped
Directions

1In a large skillet, heat oil over medium-high heat.

2Add garlic, onions and carrots; cook for 4-5 minutes or until onions are softened.

3Stir in beans, chicken stock and cumin; bring to a boil.

4Reduce heat to medium-low and simmer, covered, for about 20-25 minutes or until the carrots are soft.

5In a food processor or blender (I use my hand mixer), puree soup in batches until smooth.

6Sprinkle with parsley before serving.
