- 2 slices bacon, diced
- 1/4 c. chopped onion
- 1 clove garlic, crushed
- 2 (13 3/4 oz.) cans condensed chicken broth
- 2 c. chopped carrots
- 1 c. diced potatoes
- 1 medium tomato, chopped
- 1 tsp. salt
- dash of white pepper
Directions

1Cook and stir bacon, onion and garlic in large saucepan until bacon is crisp.

2Stir in remaining ingredients.

3Heat to boiling; reduce heat.

4Simmer uncovered until vegetables are tender; 15 to 20 minutes.

5Pour mixture into blender and cover.

6Blend on high until smooth.

7If thinner consistency is desired, stir in water or chicken broth.

8Garnish with sour cream, snipped parsley or shredded carrot, if desired.
