  • 1/2 pounds Sweet Snap Peas
  • 8 leaves Mint
  • 1 piece Shallot, Finely Chopped
  • 2 Tablespoons Lemon Zest
  • 3 Tablespoons Olive Oil
  • 3 Tablespoons Rice Vinegar
  • 1/4 cups Parmesan Shaved

Directions

    Slice the peas lengthwise, scoop out peas place in a bowl and thinly julienne the shells, add to bowl, julienne mint and add to bowl along with shallots, lemon zest.

    Whisk oil and vinegar together, toss through ingredients.

    Add Parmesan, carefully toss, season with salt and pepper.
