- 1 (9 or 10-inch) pie shell, baked
- 2 1/2 lb. or 7 medium peaches, peeled
- 3/4 c. orange juice
- 3/4 c. sugar
- 3 Tbsp. cornstarch
- 2 Tbsp. lemon juice
- 3 tsp. finely shredded orange peel
Directions

1Puree 1 cup peaches with orange juice.

2Mix sugar and cornstarch; add puree.

3Bring to boil over high heat, stirring constantly until mixture thickens.

4Cool quickly.

5Slice remaining peaches.

6Mix with lemon juice and puree.

7Pour into baked shell and garnish with orange peel.
