- 8 eggs, slightly beaten
- 1 c. shredded Swiss or Cheddar cheese
- 1/2 c. water
- 8 slices bacon, cooked crisp and crumbled
- 2 tsp. minced onions
- 1/4 tsp. salt
- 1/8 tsp. nutmeg
- 1/8 tsp. pepper
- 1 Tbsp. butter
Directions

1Beat together eggs, 3/4 cup cheese, water, bacon, onion, salt, nutmeg and pepper.

2Melt butter in an iron 10-inch skillet over medium heat.

3Pour egg mixture in and cook, without stirring, over low to medium heat until set, 7 to 9 minutes.

4Sprinkle with remaining cheese.

5Broil about 5 to 6 inches from heat for 2 to 3 minutes.

6Cut into wedges to serve.
