- 1 c. butter
- 2 c. sifted confectioners sugar
- 4 oz. unsweetened chocolate, melted and cooled
- 4 eggs
- 2 tsp. vanilla
- 1 tsp. peppermint extract
- 1 Tbsp. graham cracker crumbs (optional)
- whipped cream (optional)
Directions

1In a large bowl beat butter and sugar until light and fluffy. Beat in chocolate, eggs, vanilla and peppermint until light and fluffy.

2Spoon into 18 paper-lined muffin cups.

3Sprinkle with optional graham cracker crumbs.

4Freeze at least 5 hours, or up to 2 weeks.

5To serve, remove from freezer, top with whipped cream if desired, serve immediately.
