Ginger Glazed Shrimp

  • 1 12 lbs jumbo shrimp, peeled and deveined
  • 2 tablespoons ginger preserves
  • 2 limes, juice of
  • 12 cup fresh cilantro, coarsely chopped
  • 2 tablespoons olive oil

Directions

    In large skillet, heat oil over med-high.

    Add shrimp and stir-fry til partially cooked, 1-2 minute

    Stir in preserves and cook til shrimp are pink and firm, about 2 min more.

    Remove from heat and toss with lime juice and cilantro.

    Season to taste with salt and pepper.
