  • 1 lb. carrots
  • 1 c. apricot nectar
  • 1/4 tsp. grated lemon rind
  • 1 tsp. sugar
  • 1 Tbsp. cornstarch
  • 1/2 c. water
  • 1 Tbsp. lemon juice
  • 1 Tbsp. butter or margarine
  • 1 tsp. salt

    Peel and slice carrots; add water and cook in covered pan until just tender, about 10 minutes, then drain.
