- 1 c. apricot nectar
- 1/4 tsp. grated lemon rind
- 1 tsp. sugar
- 1 Tbsp. cornstarch
- 1/2 c. water
- 1 Tbsp. lemon juice
- 1 Tbsp. butter or margarine
- 1 tsp. salt
Directions

1Peel and slice carrots; add water and cook in covered pan until just tender, about 10 minutes, then drain.

2Combine remaining ingredients and add to carrots; cook until sauce is clear and thickened.
