  • 2/3 c. apricot or peach preserves
  • 1/4 c. balsamic vinegar
  • 2 tsp. grated orange peel
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 large onions, quartered
  • about 4 lb. chicken (legs, thighs or breasts)
