- 2 1/2 tablespoons regular or low-fat mayonnaise
- 1 1/2 tablespoons sweet pickle relish
- 3 teaspoons fresh lemon juice
- 2 1/2 cups cornflakes
- 2 teaspoons grated lemon peel
- 2 tablespoons (1/4 stick) butter, melted
- 3/4 pound white fish fillets (such as orange roughy), cut crosswise into 3/4-inch-wide strips
Directions

1Position rack in top third of oven and preheat to 500 F. Mix mayonnaise, relish and 1 1/2 teaspoons lemon juice in small bowl.

2Season sauce to taste with salt and pepper.

3Grind cornflakes in processor until coarse crumbs form.

4Transfer to bowl; mix in lemon peel.

5Mix butter and 1 1/2 teaspoons lemon juice in small bowl.

6Season fish with salt and pepper.

7Brush with lemon butter, then dip into cornflake mixture, coating completely.

8Arrange fish on baking sheet.

9Sprinkle with any remaining cornflake mixture.

10Bake fish until cooked through, about 10 minutes.
