- 6 medium potatoes, boiled in skins
- 2 c. shredded Cheddar cheese
- 1/4 c. butter or margarine
- 1 1/2 c. sour cream (room temperature)
- 1/3 c. chopped onion
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. butter
Directions

1Peel potatoes and shred coarsely.

2Combine cheese and 1/4 cup butter or margarine in saucepan.

3Over medium heat, stir until melted.

4Remove from heat.

5Blend in sour cream, onion, salt and pepper.

6Fold in potatoes.

7Place in greased casserole and dot with 2 tablespoons butter.

8Bake at 350° for 25 minutes.
