  • 6 medium potatoes, boiled in skins
  • 2 c. shredded Cheddar cheese
  • 1/4 c. butter or margarine
  • 1 1/2 c. sour cream (room temperature)
  • 1/3 c. chopped onion
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. butter

Directions

    Peel potatoes and shred coarsely.

    Combine cheese and 1/4 cup butter or margarine in saucepan.

    Over medium heat, stir until melted.

    Remove from heat.

    Blend in sour cream, onion, salt and pepper.

    Fold in potatoes.

    Place in greased casserole and dot with 2 tablespoons butter.

    Bake at 350° for 25 minutes.
