Greek-Style Zucchini Salad

- 1 tablespoon olive oil
- dried oregano ground
- dried basil ground
- 1/2 teaspoon garlic powder
- salt
- ground black pepper
- 3 zucchini medium-sized
- 2 tomatoes sliced
- 6 black olives chopped
- 1/4 cup goat cheese crumbled
- 1 teaspoon olive oil
- 1 teaspoon balsamic vinegar
Directions

1Mix the olive oil with a pinch of oregano, a pinch of basil, and the garlic powder. Add salt and pepper to taste and set aside.

2Cut the zucchini into sticks, then cover with the oil mixture and pan-sear on a hot skillet. Turn the zucchini over every 3 minutes to cook on all sides. Remove and let cool.

3Cut into medium pieces and mix with the tomatoes, olives, and goat cheese.

4Mix the ingredients for the vinaigrette together to obtain a smooth and even mixture.

5Dress the salad, mix carefully, and serve.
