Green Bean Soup

Ingredients

  • 4 c. cut frozen beans
  • 3 medium potatoes
  • 4 slices bacon, cut up
  • 3 Tbsp. flour
  • 2 c. cold water
  • 1/4 c. vinegar
  • salt, pepper and parsley flakes to taste

Directions

    In large kettle, cook beans and potatoes.

    While they are cooking, fry bacon until almost crisp.

    Take bacon out and add it to beans and potatoes.

    Keep drippings in pan.

    Add salt, pepper and parsley flakes to taste.

    Heat fat in pan and add flour. Brown as for gravy.

    When as brown as desired, add water; stir until it thickens.

    Add to soup; let simmer.

    Add vinegar to soup; simmer for at least 30 minutes.

    Longer won't matter.

    Serve hot.
