- 2 1/2 c. all-purpose flour
- 1 1/2 c. yellow corn meal
- 4 tsp. baking powder
- 1 tsp. each baking soda and salt
- 2 c. low-fat milk
- 1/3 c. vegetable oil
- whites from 4 large eggs
- 1 small can green chilies, drained
- 1 (11 oz.) can whole corn, drained
Directions

1Spray large cast-iron skillet with Pam.

2Heat oven to 400°. Mix flour, corn meal, baking powder, baking soda and salt in large bowl.

3Stir in milk, oil and egg whites until fairly smooth.

4Fold in chilies and corn.

5Spread in skillet.

6Bake 20 minutes or until golden brown and pick inserted in center comes out clean.

7Slice like pie and serve.
