Grilled Basil Shrimp

Ingredients

  • 1/4 c. olive oil
  • 1/4 c. white wine
  • 2 Tbsp. lemon juice
  • 1 Tbsp. Dijon mustard
  • 1/4 c. finely chopped fresh basil (3 tsp. dry basil)
  • 24 jumbo shrimp (1 1/2 lb.) shelled (except for tail) deveined, rinsed and patted dry

    Whisk marinade ingredients in a large bowl until blended.

    Add shrimp and toss to coat.

    Cover and refrigerate at least 30 minutes, not more than 2 hours.

    Drain shrimp; reserve marinade for basting.

    Grill 4 to 6 inches above coals 2 to 3 minutes per side, basting once, until shrimp are pink and barely opaque in center.
