Ingredients
- 3 to 4 Cornish hens
- 1 tsp. salt
- 1/2 tsp. ginger
- 1 clove garlic, crushed
- 2 Tbsp. lemon juice
- 4 Tbsp. vegetable oil
- 1/2 c. frozen orange juice concentrate
- 1/2 c. giblet stock
- 2 tsp. soy sauce
Directions

1Wash Cornish hens and place in a pan.

2Blend remaining ingredients and pour over hens.

3Let stand for at least 1 hour. Drain and reserve marinade.

4Pull neck skin back and secure wings against body.

5Tie wings and legs together.

6Follow manufacturer's directions for securing hens on spit, then start the motor.

7Grill for 1 hour or until golden brown and done, brushing occasionally with reserved marinade.
