Ingredients
- 6 eggs or 2 eggs plus 6 whites for lower cholesterol
- 1/2 c. milk
- 1 Tbsp. parsley
- 1/8 tsp. pepper
- salt to taste
- 1/2 c. red or green pepper, diced
- 1/4 c. onion, chopped
- 10 oz. frozen spinach, thawed and drained
- pinch of nutmeg
- 4 oz. cubed ham
- 1/2 c. low-fat cottage cheese
- 1 c. Cheddar cheese, shredded
- Parmesan cheese
Directions

1Whip together first 5 ingredients.

2Saute pepper and onion. Add spinach and nutmeg.

3Cook 5/8 cup egg mixture in greased 10-inch skillet as for an omelet.

4Slide or roll into greased 10-inch round quiche pan.

5Layer 1/2 ham, 1/2 spinach, 1/2 cottage cheese and 1/2 Cheddar cheese on top.

6Cook another omelet and repeat layers.

7Cook a third omelet.

8Slide on top of layers. Sprinkle with Parmesan. Bake for 20 to 25 minutes at 375° until hot.
