Ham N' Cheddar Casserole

  • 2 bags Success rice
  • 2 c. frozen mixed vegetables, thawed
  • 1 1/2 c. sliced mushrooms
  • 1/2 c. chopped onion
  • 1 Tbsp. butter or margarine
  • 1 can nacho cheese soup
  • 1/2 c. milk
  • 1 c. cut up cooked ham

Directions

    Prepare rice according to package.

    Prepare mixed vegetables according to package directions omitting margarine and salt.

    In a large skillet, saute mushrooms and onion in butter until tender. Mix soup and milk. Stir into skillet.

    Add ham and cooked vegetables. Simmer until thoroughly heated. Serve over warm rice. Serves 6 to 8.
