- 1 1/2 pounds russet potatoes, about 3, peeled and coarsely grated
- 1 tablespoon vegetable oil, more as needed
- Salt and pepper to taste

1Combine all ingredients in a bowl and mix thoroughly.

2Place a 10-inch nonstick skillet over medium-high heat for about 2 to 3 minutes.

3Spread potato mixture evenly in pan and press with spatula.

4Cook until bottom browns, about 10 minutes.

5If potatoes look too dry, add just enough oil to lightly coat.

6Flip with spatula and continue cooking until browned.

7Cut into wedges and serve warm.
