Italian Rice Balls

Ingredients

  • 1 c. cooked rice, cooked according to directions (not instant)
  • pepper and parsley
  • 3 eggs
  • 1 c. fine bread crumbs
  • 1/4 lb. pepperoni, chopped fine
  • 1/4 lb. ham, chopped fine
  • 1/2 c. grated cheese
  • 4 oz. fancy shredded Mozzarella cheese
  • 1 tsp. baking powder
  • 1 Tbsp. cornstarch

Directions

    Add pepper and parsley to rice; let cool.

    Mix all ingredients and form into balls.

    Cook in oil until golden brown (drain on paper towel).

    May need flour on your hands when rolling into balls, sometimes sticky.

    Before serving, bake in oven at 350° for 10 to 15 minutes or until brown.
