Ingredients
- 3 lb. large shrimp, peeled and deveined
- 3 cucumbers, peeled and sliced
- 1 can pitted black olives
- 1 bunch parsley, chopped
- 3 scallions, sliced
- 1/3 c. lemon juice
- 1 c. extra-virgin olive oil
- 2 Tbsp. cumin
- salt and pepper to taste
Directions

1Salt cucumbers; place in bowl for 2 hours.

2Wring out moisture.

3Mix other ingredients together in large bowl.

4When cucumbers are ready, add to mixture.

5Let it sit for an hour; adjust seasoning.

6Serve on bed of lettuce.
