  • FOR THE CAKE:
  • 3-1/2 cups Flour
  • 1-1/2 teaspoon Baking Powder
  • 1/4 teaspoons Salt
  • 1-3/4 cup Sugar
  • 3 Eggs
  • 3/4 cups Butter, At Room Temperature
  • 1 teaspoon Vanilla Or Citrus Extract
  • 1 cup Milk
  • 1-1/2 cup Jujubes, Sliced And Sprinkled With Flour
  • FOR THE TOPPING:
  • 1 Tablespoon Butter
  • 1/3 cups Milk
  • 2-1/2 cups Icing Sugar

Directions

    Sift together the flour, baking powder and salt. Set aside.

    In a large mixing bowl with a handheld mixer, mix together the sugar, eggs, butter and vanilla or citrus extract. Slowly add in the dry ingredients, alternately with the milk, and mix until just combined. Take a spatula and fold in the jujubes.

    Pour the batter into a greased tube pan. Bake the cake at 350°F for 1 hour or until a toothpick inserted into the cake comes out clean. Generally, it takes 1 hour and 15 minutes before my cake is properly baked. It depends on the oven.

    Cool the cake completely before putting on the topping.

    For a quick icing, mix together the butter, milk and icing sugar.
