- FOR THE CAKE:
- 3-1/2 cups Flour
- 1-1/2 teaspoon Baking Powder
- 1/4 teaspoons Salt
- 1-3/4 cup Sugar
- 3 Eggs
- 3/4 cups Butter, At Room Temperature
- 1 teaspoon Vanilla Or Citrus Extract
- 1 cup Milk
- 1-1/2 cup Jujubes, Sliced And Sprinkled With Flour
- FOR THE TOPPING:
- 1 Tablespoon Butter
- 1/3 cups Milk
- 2-1/2 cups Icing Sugar
Directions

1Sift together the flour, baking powder and salt. Set aside.

2In a large mixing bowl with a handheld mixer, mix together the sugar, eggs, butter and vanilla or citrus extract. Slowly add in the dry ingredients, alternately with the milk, and mix until just combined. Take a spatula and fold in the jujubes.

3Pour the batter into a greased tube pan. Bake the cake at 350°F for 1 hour or until a toothpick inserted into the cake comes out clean. Generally, it takes 1 hour and 15 minutes before my cake is properly baked. It depends on the oven.

4Cool the cake completely before putting on the topping.

5For a quick icing, mix together the butter, milk and icing sugar.
