- 10 large baking potatoes
- 1 doz. eggs
- 2 Tbsp. butter
- 1 pt. sour cream
- 2 c. shredded Cheddar cheese
Directions

1Bake potatoes in oven until done.

2Cool.

3Slice potatoes lengthwise and scoop out.

4Scramble eggs.

5Cook eggs in butter, leaving eggs still soft.

6Mix eggs with potato meat, sour cream and 1 1/2 cups cheese.

7Heap mix into potato shells.

8Sprinkle remaining cheese over potatoes.

9Bake at 400° for 30 minutes.
