Lemon Angel Cake

- 6 egg yolks
- 3/4 c. sugar
- 3/4 c. lemon juice
- 1 1/2 tsp. lemon rind
- 1 Tbsp. gelatin
- 1/4 c. water
- 1 angel food cake
- 6 egg whites
- 3/4 c. sugar
- 1/2 pt. heavy cream
Directions

1Dissolve gelatin in 1/4 cup water.

2Cook egg yolks, sugar, lemon juice, lemon rind and gelatin over hot water until it coats a spoon. Beat egg whites stiffly with sugar and add to mixture. Break angel food cake (either homemade or bakery cake) into bite size pieces.

3Oil an angel food cake pan and alternate layers of cake with sauce.

4Chill overnight and serve with whipped cream frosting.

5Serves 10 to 12.
