  • 16 graham crackers, crumbed
  • 2 Tbsp. plus 2 tsp. reduced calorie oleo (tub)
  • 1/2 c. evaporated skim milk
  • 1 envelope (eight 1/2 c. servings) or 2 envelopes (four 1/2 c. servings each) low calorie lemon flavored gelatin
  • 1 c. boiling water
  • 2 c. part-skim Ricotta cheese

    Preheat oven to 350°.

    Spray 9-inch pie plate; set aside. Combine crumbs and oleo, mixing; press crumb mix over back and sides of plate.

    Bake until crisp about 10 minutes, let cool.
