  • 2 1/2 lb. fryer chicken, disjointed and skinned
  • 1/4 c. vegetable oil
  • 1/4 c. lemon juice
  • 2 tsp. dried oregano or tarragon, crushed
  • 1/8 tsp. garlic powder
  • 2 Tbsp. chopped fresh parsley
  • 1/4 tsp. paprika

Directions

    Arrange chicken in single layer in a baking dish.

    Combine oil, lemon juice, oregano or tarragon and garlic powder; brush on chicken.

    Cover and bake for 35 minutes in 350° oven.

    Remove cover and brush with lemon-oil mixture.

    Bake another 20 minutes. Sprinkle with parsley and paprika.

    Serve.
