- 5 Tbsp. sifted all-purpose flour
- 1 c. sugar
- 3 Tbsp. butter or margarine
- 3 eggs, separated
- 1 c. milk
- 1/4 c. lemon juice
- 1/4 tsp. lemon rind, grated
Directions

1Mix flour and sugar.

2Cream together butter and flour mixture. Beat egg yolks until thick and lemon colored.

3Add yolks and milk.

4Gradually add lemon juice and rind.

5Beat egg whites until stiff, but not dry; fold in carefully.

6Pour into greased baking dish.

7Place in pan with 1 inch of hot water.

8Bake in moderate oven at 350° for 35 minutes.

9Serves 6.
