- 1 c. quick rolled oats
- 1/2 c. brown sugar
- 1/3 c. flour
- 1/3 c. melted butter
- 1 envelope unflavored gelatin
- 4 egg yolks (beaten)
- 1 tsp. grated lemon rind
- 1/2 c. sugar
- 4 egg whites
Directions

1For crust, combine oats, flour, brown sugar and salt in a shallow pan.

2Add melted butter and mix thoroughly.

3Bake 10 minutes at 350°.

4Soften gelatin in cold water.

5Combine egg yolks, sugar, lemon rind and lemon juice in saucepan.

6Cook over low heat until mixture boils.

7Remove from heat, add softened gelatin and stir until dissolved.

8Cool thoroughly.

9Beat egg whites until foamy.

10Gradually add sugar, then beat until mixture stands in peaks.

11Fold cooled gelatin mixture into beaten egg whites.

12Put half of crumbs in pan, add filling and top with rest of filling.

13Chill until set.
