Ingredients
- 1 c. sugar
- 1/8 tsp. salt
- 1/4 c. cornstarch
- 1 c. boiling water
- 1 Tbsp. butter
- 2 eggs, separated
- 2 Tbsp. powdered sugar
- 1 lemon rind, grated (1 large lemon)
- 1/4 c. lemon juice (about 2 lemons)
- 1 pie shell (unbaked)
Directions

1Mix cornstarch, sugar and salt.

2Add water slowly, stirring to dissolve ingredients.

3Cook 5 minutes, stirring constantly.

4Add butter; remove from fire and cool slightly.

5Add beaten egg yolk, rind and juice of lemon and mix well.

6Pour filling into baked pie shell.

7Top with meringue.

8Brown in slow oven.
