- 1 1/2 Tbsp. butter
- 1 c. sugar
- 3 Tbsp. flour
- 3 eggs, separated
- 1 Tbsp. grated lemon rind
- 1/3 c. lemon juice
- 1 1/2 c. milk
Directions

1Preheat oven to 425°.

2Cream butter; stir in flour, sugar and egg yolks.

3Add lemon rind, lemon juice and milk.

4Beat egg whites until stiff.

5Add to egg yolk mixture.

6Pour into unbaked pie shell.

7Bake for 12 minutes at 425°.

8Reduce heat to 325° and bake 30 minutes more.

9Remove from oven and serve.
