- 1 pound chicken breats, boneless skinned
- 2 teaspoons virgin olive oil
- 2 shallots thinly sliced
- 1/4 cup green bell pepper diced
- 1 tablespoon curry powder
- 2 limes
- 1/4 cup plain low fat yogurt
- parsley sprigs
- 1 tablespoon almonds slivered
Directions

1Cut chicken diagonally into thin slices.

2In a large non-stick skillet, heat oil and saute shallots until softened.

3Add bell pepper and cook until tender; stir in curry powder.

4Add chicken and stir-fry until in no longer pink.

5Add lime juice.

6Just before serving, stir yogurt into skillet.

7Garnish with parlsy and almonds.
