Lime Marinated Swordfish

- 2 lb. swordfish (or tuna, shark, marlin)
- 2 tsp. lime zest
- 1/4 c. olive oil
- juice of 3 limes
- 1 clove garlic, minced
- 1/2 c. fresh cilantro, chopped
Directions

1Place fish in a shallow pan.

2In a small bowl, combine lime juice, zest, garlic, olive oil and cilantro.

3Pour over fish and turn to coat thoroughly.

4Cover and refrigerate for 2 to 3 hours. Drain fish and broil or grill until fish flakes easily with a fork, about 8 to 10 minutes per inch of thickness.

5Serve garnished with cilantro.
