- 3 1/2 lb. cucumbers
- 1 gal. water
- 4 c. sugar
- 1 1/2 tsp. mixed pickle spice
- green food coloring
- 1 c. lime
- 1 qt. cider vinegar
- 1 1/2 tsp. celery seed
- 1 tsp. salt
Directions

1Cut cucumbers into 1/4-inch slices and cover with water and lime and let stand for 24 hours.

2Rinse well; cover with clear water.

3Let stand for 4 hours.

4Drain well.

5Heat vinegar, sugar, celery seed, and pickle spice and salt to lukewarm.

6Pour over pickles.

7Let stand overnight.

8Add food coloring.

9Bring pickles and mixture to boil for 35 minutes.

10Pack in jars and seal.
