Loaded “Smashed” Potatoes

- 6 whole Medium To Large Red Potatoes
- 4 slices Center-cut Bacon
- 1 Tablespoon Olive Oil
- 1 teaspoon Minced Garlic
- 1 teaspoon Parsley Flakes
- 1 cup Shredded Cheddar Cheese
- 2 Tablespoons Sour Cream (optional)
- 1/2 cups Fresh Chives (optional)
Directions

1Rinse and prick potatoes and place in the microwave for about 6 minutes or until soft. In a large skillet, cook bacon to liking. I like mine extra crispy. It adds a nice crunch to this dish. Remove bacon from skillet when done and remove some of the grease. Leave a little for taste. Remove potatoes from the microwave and slice in 1-inch slices. Leave skins on. Add to the bacon grease in the skillet. Add olive oil if needed. Add minced garlic and parsley.

2Once bacon has cooled, cut up into pieces and add to the skillet. Cook on a medium heat. You want the potatoes to get crispy on the sides. Once potatoes are crisp, sprinkle cheese over potatoes and bacon and close the lid and lower the heat. Leave on for about 3 minutes or until cheese has fully melted.

3Ooey gooey yum! Add sour cream and fresh chives if desired.
