- 1 lb. lobster meat
- 4 Tbsp. butter
- 2 Tbsp. flour
- 2 c. clam broth (dry)
- 1 3/4 c. water
- 2 Tbsp. dry sherry (optional)
- 1/2 tsp. paprika
- 1 c. heavy cream
- dash of white pepper
Directions

1Saute lobster lightly if raw.

2Dice; set aside.

3Melt butter; stir in flour.

4Cook 2 minutes.

5Blend in dry clam broth.

6Stir in water.

7Bring to a boil.

8Reduce heat; simmer 5 minutes.

9Add all but cream; mix well.

10Add cream; heat through.
