  • 1 (8 oz.) pkg. cream cheese
  • 1 can refried beans
  • 2 cloves garlic, minced
  • 1/4 large onion, minced
  • 1 tsp. salt (optional)
  • 10 to 12 oz. shredded cheese (Mexican and Mozzarella or any kind you prefer)
  • tortilla chips (Scoops are great for this)

    Preheat oven to 475°. Spread cream cheese evenly in an ungreased 10-inch casserole dish; set aside. In saucepan over low heat, mix beans, garlic, onion and salt. When mixture is hot, add 1/2 cup cheese and mix until melted. Spread mixture over cream cheese; top with remainder of shredded cheese. Bake first 10 to 15 minutes uncovered. Then cover with tinfoil and bake another 10 to 15 minutes or until sides have bubbled a few minutes. Remove from oven; remove foil. Let cool 2 to 3 minutes. Serve hot with chips.
