- 1/2 cup chopped green peppers
- 1/2 cup chopped onions
- 1 clove garlic, minced
- 1 to 2 tsp. curry powder
- 1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
- 1 can (14-1/2 oz.) whole tomatoes, drained, cut up

- 1/2 tsp. dried thyme leaves
- 1/8 tsp. black pepper
- 1/2 lb. (8 oz.) VELVEETA, cut into 1/2-inch cubes
- 6 cups hot cooked rice
Directions

1Melt butter in large saucepan on medium heat.

2Add green peppers, onions, garlic and curry powder; cook and stir until vegetables are crisp-tender.

3Add chicken; cook and stir 5 min.

4or until no longer pink.

5Stir in tomatoes, lemon juice, thyme and black pepper; simmer on low heat 5 min.

6or until chicken is done, stirring occasionally.

7Add VELVEETA; cook until melted, stirring frequently.

8Serve over rice.
