- 1/2 c. butter or margarine
- 1 c. light brown sugar
- 3 large eggs
- 1 1/2 c. all-purpose flour
- 2 tsp. baking powder
- 1/8 tsp. baking soda
- 1/8 tsp. salt
- 1 1/2 c. whole wheat flour
- 1/4 tsp. vanilla
- 1 c. orange juice
- 1 can (11 oz.) mandarin orange segments, drained and cut in thirds
- 1 can (4 oz.) chopped walnuts or pecans
Directions

1Heat oven to 350°.

2Grease 18 regular muffin cups.

3Beat butter and sugar until pale yellow and fluffy.

4Beat in eggs.

5Sift all-purpose flour with baking powder, baking soda and salt.

6Stir in whole wheat flour.

7Add vanilla to orange juice.

8Fold flour mixture into butter mixture alternately with orange juice, ending with flour.

9Fold in oranges, then nuts.

10Spoon into muffin cups and bake until lightly brown, about 30 minutes.
